Gluten free butcher caters to sufferers of coeliac's disease
EVEN one crumb that contains gluten can affect a person with coeliac's disease, says butcher Brad Holloway.
That's why making small goods on surfaces used for products containing gluten can be dangerous.
But, at his new Ballina and his Lismore butchery, they've solved that problem.
All their gluten-free products are made in an isolated preparation area to ensure they are 100% gluten-free.
"Through word of mouth we're getting more and more demand," says Mr Holloway, whose butchery is a member of the Coeliac Society of NSW.
He said he was inspired to offer high quality gluten-free products after his partner, Tanya, was diagnosed with coeliac's disease.
"Every single product used in our goods for coeliacs is certified gluten-free," he said.
"We even use crumbs from maize corn, that cost $10 a kilogram, as opposed to the ones with gluten that cost $2 a kilogram."
As well as gluten-free sausages, rissoles and marinades, the butchery offers nitrate-free ham and bacon and antibiotic and hormone-free chicken.
"We do it with brown sugar, honey and salt," said Mr Holloway.
"It takes a bit longer to process but it's delicious."
He said since offering gluten-free products he's been surprised by demand.
