Recipe: Spiced barbeque chicken wings with pineapple salsa
CHICKEN wings are so versatile and can be cooked many different ways. We always purchase free range organic chicken wings as you can certainly see and taste the difference. Today's recipe is delicious and perfect for the entire family - everyone loves a good chicken wing or five.
Spiced barbecue chicken wings, pineapple salsa
- 1kg of chicken wing drumettes
- ½ cup buttermilk
- 4 tbs of Dan & Steph's BBQ Rub available from our website (see below) or 4 tbs of the spice recipe below.
Pineapple salsa -
- ½ a fresh pineapple
- ½ red onion
- 1 Lebanese cucumber
- Juice of 1 lime
- 1 tbs of honey.
Yogurt sauce -
- 1 medium tub natural Greek yogurt
- ½ bunch of coriander
- ½ bunch of mint
- Pinch of salt.
METHOD: In a bowl, add the chicken wings, spice rub and half a cup of buttermilk. Use your hands to generously coat the wings in the marinade. Place into the fridge and allow to marinate overnight.
To cook, preheat your barbecue grill to hot and place wings on the oiled grill. Allow to cook for 2-3 mins each side, then remove.
To make the salsa, dice your pineapple into small 0.5 cm cubes. Be sure to remove the stem of the pineapple, you don't need this.
Dice red onion very finely, place into a sieve then soak in water for 3-4 mins. Drain well.
Dice cucumber into similar size pieces. Place everything into a bowl and toss well.
Add the lime juice and honey - mix to coat, then season with salt to taste.
To make the yogurt, simply chop up coriander and mint very finely, then stir through the yogurt. Season with a pinch of salt.
Serve all together. Serves 4.

Make your own spice rub
- 1/2 cup of brown sugar
- 1/2 cup of smoked paprika
- 1 tbs of black pepper
- 1 tbs of salt
- 1 tbs of chilli powder
- 1 tbs of garlic powder
- 1 tbs of onion powder
METHOD: Combine all ingredients. Store in an air-tight container. Spice mix will keep for weeks.
