Modern, sophisticated bistro opens at Urangan Marina
THE fridges are stocked with a collection of boutique beers, the shelves with fine wine, and the menu is packed with a stack of mouth-watering dishes.
Bistro Aubergine is Hervey Bay's newest place to dine, socialise and experience some of the Fraser Coast's finest views.
Choicely positioned at the Urangan Marina - underneath the Mantra - the bistro is the result of owner Geoffrey Nocher's vision to create something modern, sophisticated and friendly for the region.
"I wanted somewhere people felt comfortable to go," Mr Nocher said.
"I'm not into badges - we're not a cafe, we're not a brasserie, so the only thing left was a bistro, and it's a bistro in the truest sense of the word."
Set on the doorstep of the Pacific Ocean, with an outlook across the bay towards the world heritage-listed Fraser Island, Mr Nocher said the view was his primary reason for choosing the location.
He said he planned to target locals, contrary to the commonly held belief that businesses in that part of town survived on tourist trade created by nearby resorts and whale-watching vessels.
Part of the "target local" campaign is a pledge to support Fraser Coast businesses and buy fresh fruit, vegetables, fish, milk and meat from within the region.
Bistro Aubergine opens Wednesday to Monday 6am-10pm and Tuesday 6am-2pm. Geoffrey Nocher and his team serve breakfast, lunch and dinner.
